虾酱炒鱿鱼 Squid with Shrimp Paste (Plaa Muek Phad Ka-bpi)


A simple Thai dish.
This month is "Asian Food Feast --- Thailand".
Try to cook some thai dish. In my place here are difficult to have thai dish.
Here got no Thai restaurant.
I actually didn't know much about this Thai dish.
Here is the book name "Thai @ home 泰正宗了", where i learn to cook Thai food.




Ingredients :

300 g                fresh squid
(score the flesh of squid in a criss cross pattern and cut into piece about 2 " X 2")
1 tbsp               shrimp paste
3 tbsp               water
1 tbsp               chopped garlic
1/2 cup               peeled garlic
1/4 cup               fresh bird's eye chilli 
(follow your taste)
1 tbsp               light soy sauce
1 tbsp               oyster sauce
1 tbsp               sugar
1/2 tbsp               vinegar
3 tbsp               cooking oil
1/4 cup               fresh coriander leaves for garnishing

Methods :

1.     Fry chopped garlic in oil over medium heat until fragrant. Mix shrimp paste with water together and pour into the wok and stir well.

2.     Add in squid, peeled garlic and bird's eye chilli, stir well. Add in a little bit of water if it is too dry.

3.     Season with oyster sauce, light soy sauce, sugar and vinegar. Stir-well, turn off the heat, garnish with coriander leave. Serve.
