I like this soup although it is meatless but it is good and sweet.
Love the aromatic from the watercress and mushroom.
According to the "Best Soup Cook Book", this is aids digestion, clears heat from our body, nourishes the lungs, eases constipation, help prevent cancer and burns fat.

This is a long-stewed soup, and i like this kind of soup.
Although they are quite more of ingredients, therefore the soup was sweet and lovely.
Recipe from : Best Soup Cook Book
Ingredients :
1 .......... carrot (cut into pieces)
300 g .......... water chestnuts
600 g .......... watercress
38 g .......... dry mushroom
16 g .......... white fungus
75 g .......... cashew nut
( i change to shelled peanuts)
4 pcs .......... honey dates
dash of sweet and bitter almonds
12 - 16 cups ..... water
pinch of salt
Methods :
1. Soak mushroom until soft.
2. Wash all ingredients and cut them into pieces.
3. Put them in a pot with water and bring to boil.
4. Turn to low heat and simmer for 2 hours, sprinkle salt to season.
Ready to serve. Enjoy!
