今天早餐吃蒸包子,香葱猪肉包子加入了水煮蛋。
我家两个小孩喜欢吃蒸包子。诚诚仔喜欢吃鸡蛋,就放了一些在包子内。
This is what we have for today breakfast, Steamed pao。
My two kids like to eat steamed pao. This time i put in hard boiled egg into the pao.
My elder son likes the hard boiled egg.

包子面皮 Chinese Bun Dough
材料 Ingredients :
中筋面粉 。。。。。 300 克 (我用包粉) plain flour 300g ( i use pao flour)
糖 。。。。。 50 克 sugar 50g
发粉 。。。。。 3.5 克 baking powder 4g
速发酵母 。。。。。 4 克 instant yeast 4g
白油 。。。。。 18 克 (用了粟米油替代) shortening 18g (change to corn oil)
做法 :
1. 将中筋面粉,糖,发粉,酵母和白油放入搅拌缸,慢慢加水搅拌至均匀光滑。搁置发酵约 10 - 15 分钟。
Put plain flour,sugar,baking powder, instant yeast and shortening in a mixing bowl. Gradually add water and stir until smooth. Set aside to rise for about 10 - 15 minutes.
2. 将面团揉压翻面一次,将其发酵气压出来。
Punch to deflate the dough.
3. 将面团搓成长条形,分成适量的大小(我的是 55 克 一小团),利用擀面棍将面团擀成圆形,中间留厚度。
Roll dough into a long strip and cut into equal size ( I made into 55g / pcs). Use a rolling pin to roll dough into a round disc, make sure that the center is slightly thicker.
4. 将包子包入一份馅料和1/4 的水煮蛋,一手拿着包子面皮,另一只手食指和大拇指捏紧,往前推进一折一折捏紧至最后密合,收口朝上放入垫纸上,搁置发酵约 1 小时,排入蒸笼。
Put minced pork and 1/4 of the hard boil egg stuffing on a piece of dough . Use your thumb and index finger to draw edges up into the center to enclose the filling. Pinch top to seal. Place on a paper lining with sealed top facing up. Set aside to rise for about an hour. Transfer to the steaming basket.
5. 烧开蒸锅水,放入包子,中火蒸约 15 分钟即可。
Bring water to boil. Steam buns over medium heat for about 15 minutes.
猪肉馅料 Pork Filling :
猪绞肉 。。。。。 200 克 minced pork 200g
肥猪绞肉 。。。。。 30 克 minced fatty pork 30g
葱花 。。。。。 100 克 chopped spring onion 100g
香菇 。。。。。4 小粒(切粒) mushroom 4(diced)
水煮蛋 。。。。。 2 粒(切4份/粒) hard boil egg 2(slice 1/4pcs)
调味料 Seasoning :
盐 。。。。。 1/4 茶匙 salt 1/4 tsp
糖 。。。。。 1 1/2 茶匙 sugar 1 1/2 tsp
胡椒粉 。。。。。 少许 dash of pepper
酱青 。。。。。 1 汤匙 light soy sauce 1 tbsp
水 。。。。。 20 毫升 water 20ml
麻油 。。。。。 1 茶匙 sesame oil 1 tsp
生粉 。。。。。 2 汤匙 tapioca starch 2 tbsp
做法 :
猪绞肉和肥猪绞肉放入碗中,加入调味料,顺同一方向仔细搅拌至右粘性,摔打数下使有弹性,加入葱花拌匀,分成 9 份。备用。
In a mixing bowl, mix well pork and seasoning. Stir in one direction until sticky, lift the mince and slap it down on the bowl a few times. Add chopped spring onion and combine well. Divide into 9 equal portion.
