鸡蛋卷 Egg Roll with Fish Paste


买了一包马鲛鱼肉浆,准备做鸡蛋卷。
平时都是用来酿豆腐或茄子,这次弄点别的。
诚诚仔和安安仔,这两个小瓜吃最多。
I buy 1 pack of fish paste from the wet market, wanting to made egg roll.
Normally, just for stuff the tofu and brinjal (eggplant), but this time want to made something different.
Cheng and An my two boys love this, and they eat much of them.
在这里鱼贩们都会把鱼肉打好,然后一包一包的卖。
因为这里大多数都是上班族,所以为了方便他们就这好这样。
买了回家就可以很快的弄来煮。
Here, the hawker will ready the fish paste and selling in small package.
This is because most of us are working, so this will easy for them to prepare for the meal.


1.
买回来的鱼浆,加入适量的胡椒粉拌匀。另外还加入了红萝卜碎和芹菜梗碎。
通常他们在打鱼饼时都已经加了盐,所以不需再加了。
For prepare the fish paste, add some pepper mix well. besides, add in some carrot cubes and coriander stalk. Normally we no need to add season because they have done it. 


2.
将 2 粒鸡蛋打散,倒入平底锅煎成蛋皮。
Beat 2 eggs and pan fry it to a thin layer. Let to cool.

将做法 ( 1 )的鱼胶涂在蛋皮上,从尾端慢慢的卷起。
Spread the fish paste from ( 1 ) onto the egg skin. From the end side, roll up carefully.

4.
把卷好的蛋卷放入蒸锅中蒸熟,切片即可。
Put the egg roll into the steamer and steam until cook, slices and serve.

5.
配上辣椒酱更是美味。
Dip the egg roll with chilli sauce or sweet sauce is just yummy.
