辣子炒鸡丝 Stir-fried Spicy Chicken Fillet

    
材料 :

鸡胸肉 100克,     红辣椒 一条(切段),     辣椒干 5只(切段),     蒜瓣 6粒(炸香)


调味料 :

蚝油1/2汤匙,     黑酱油 3茶匙,     酱油 1茶匙,     糖 2茶匙,胡椒粉适量,     水 2汤匙

做法 :

1.     鸡胸肉切丝,用少许盐和生粉醃片刻,并用温油泡至半熟,盛起。

2.     锅中留 1 汤匙热油,倒入辣椒干慢火炒香。

3.     加入炸蒜米,红辣椒,调味料及鸡肉丝炒片刻。

4.     用少许生粉水勾芡,即可盛出。

Ingredients :

100g chicken breast, 1 red chilli (cut block), 5 dried red chilli (cut block), 6 pip garlic (deep fried)

Seasoning :

1/2 tbsp oyster sauce, 3 tsp dark soy sauce, 1 tsp soy sauce, 2 tsp sugar, dash of pepper, 2 tbsp water

Method :

1.     Cut chicken meat into strips, marinate with some salt and corn flour for a short while and then blancg in medium heat oil until semi cooked.

2.     Heat 1 tbsp oil in wok, saute dried chilli until fragrant.

3.     Add in fried garlic, red chilli, seasoning and chicken strips, stir-fried for a few minutes.

4.     Thicken with cornstarch and dish out.
