双鱿炒酱油 Stir-fried Squid and Cuttlefish in Black Soy Sauce


Squid and cuttlefish.
Combined together and cook with dry chilli and black soy sauce.

Ingredients :

Squids ..... 1 pc
Cuttlefish ..... 1 pc
Dry chilli ..... 3 pcs
Red chilli ..... 1 pc
Big onion ..... 1 pc
Ginger ..... thumbs size (sliced)
Chopped garlic ..... 1/2 tbsp
Spring onion ..... 2 stalk
Coriander ..... 1 stalk

Sauce :

Black soy sauce ..... 1 tbsp
Light soy sauce ..... 1/2 tbsp
Sesame oil ..... 1/2 tbsp
Sugar ..... 1 tsp
Salt ..... 1/4 tsp

Methods :

1.     Scald the squid and cuttlefish in the boiling water until flower shape is formed. Dish and drain.

2.     Heat some oil in wok, add in ginger, garlic and onion, dry chilli and red chilli, saute until fragrant.

3.     Put in the squid and cuttlefish and stir-fried. Add in the black soy sauce and light soy sauce, stir until fragrant. Add adequate water and stir-fried until cooked.

4.     Toss in sesame oil, sugar and salt to taste. Put in the spring onion and coriander leave.

5.     If you like the sauce to be more thicken, pour in some cornstarch for the thickening.      

6.     Dish up and serve.
