泰式香茅蒜蓉蒸鱼 Thai Style Garlic Steam Fish with Lemongrass


今天又是和大家分享鱼料理。
之前也做过这样的蒸鱼,不过是没有加香茅的,
这次用了 wendyinkk 家的食谱。加入了香茅来提味。
Today i am sharing fish again.
I have made this before, but wasn't added lemongrass.
This time i use wendyinkk recipe, with lemongrass added.
这是一个很好吃,很下饭也很开胃的料理。
This recipe is really good, delicious, and appetizing too.



Ingredients :

1 ..... whole fish (about 800 g)
3 tbsp ..... finely minced garlic
1 tbsp ..... thinly slices bird's eye chilli
3 tbsp ..... calamansi juice (i use green lime juice)
1 1/2 tbsp ..... sugar
 1 tbsp ..... fish sauce
3/4 tsp ..... salt
1 ..... lemon grass, thinly sliced
1 tbsp ..... corn oil

Methods :

1.    Rinse fish and pat dry.
2.     Mix garlic, chilli, calamansi juice, sugar, fish sauce and lemongrass together. Stir until sugar and salt dissolved. Taste. It should be slightly oversalted, sourish and mildly sweet. Let it rest for 5 minutes and taste again.
3.     Put 1 tbsp of garlic mixture in the steaming plate. Put on the fish. Stuff some lemon grass and garlic mixture (no liquid) into the belly of the fish. Sprinkle top with the rest of the garlic mixture and lemongrass. Pour oil over the fish.
4.     Steam on high heat for 15 minutes or until cook.
