芒果布丁月饼 Manggo Pudding Mooncake


What a hot weather today, really hot hot hot. No mood.
Last night made this Manggo Pudding Mooncake and now good to have this.
Cool and full of manggo flavour with the inner was full of evaporated milk.
I like this. Thanks for Eileen for this yummy recipe.

 Egg yolk recipe from :  Annatay 小雨伞

▪ 准备1个蛋黄模型  Egg Yolk mould 1 pc

材料  Ingredients:

▪ 燕菜粉     Agar - agar powder ..... 2 tsp           
▪ 幼糖      Castor sugar ..... 40g                 
▪ 清水     Water ..... 150ml
▪ 盐      Salt ..... 1/8 tsp
▪ 红萝卜     Carrot ..... 100g (切块后蒸熟,打成泥。Cut and steamed until soft, blend)

做法   Methods :

把所有材料倒入锅子里煮至滚,熄火过滤后倒入制蛋黄模子里,待凝固后用牙签扣边取出。
Put all the ingredients into the pot and boiled, remove from heat and drain. Pour into the mould and let to cool.

For the filling and the pudding layer :

材料  Ingredients :
(A)
100ml ..... 牛奶或淡奶    Milk or evaporated milk
35ml ..... 水     Water
15g ..... 白糖     Sugar
1 tsp      菜燕粉     Agar-agar powder

(B)
200 ml ..... 牛奶或淡奶     milk or eavaported milk
200 ml ..... 水     water
1/2 tbsp ..... 菜燕粉    Agar-agar powder
90 g ..... 芒果布丁粉     Manggo pudding powder

做法   Methods :

1)将(A)材料煮滚,倒入小模型内,待凝固备用。 
      Boiled ingredient A, pour into mould and let to cool.

2)把水果布丁粉和牛奶搅拌均匀,备用。
      Mix manggo pudding powder with milk, set aside.

3)将水和菜燕粉煮滚,倒入做法2)再煮至滚便可。,
      Boiled water and agar-agar powder   , then pour in the mango pudding mixture and let to boiled.

4)先放 2 tbsp 的水果布丁入月饼模型内,待7-8分凝固。 
       Scoop 2 tbsp  of the pudding liquid into the mooncake mould, let 7 - 8 mins to cool.

5)再放入做法1),然后再把水果布丁倒入模型至满。
     Place 1) onto the top  of the mooncake and pour in the rest of the liquid until full cup.

6)冷藏数小时后再脱模。
     Put in the fridge for few hour before unmould. Serve and enjoy.
