鲜芒果燕菜月饼 Fresh Mango Jelly Mooncake


What a hot hot weather today,  just want to have this cooling jelly.

Recipe refer to : 小雨伞

Filling :

100 ml evaporated milk,     35 ml water,     15 g sugar,     1/2 tsp agar-agar powder

Cook all the above ingredients in a saucepan until cook and dissolved, pour into a small cup and let to cool.

Mango Jelly Layer :

water 200 ml,     evaported milk 100 ml,     sugar 40 g,     agar-agar powder 1 tsp (5 g),    
Instant jelly powder 1 tsp (5 g),     fresh mango puree 200 g

Methods :

1.     Put in all the ingredients into a small pot (except mango puree), mix well and let to boil.

2.     Remove from heat and add in the mango puree, mix well. Pour into the mooncake mould for 1/2 and let to cool. 

3.     Place in the filling on the middle of the mooncake mould, then fill up the mango jelly until fill of the cup. Let to cool and put in the fridge for few hours before serving.
