椰香金翡翠冰皮月饼 Coconut Pandan Bing Pi Mooncake


今天我又做冰皮月饼了。今天的冰皮用了椰浆来代替水。
吃起来皮带有淡淡的椰香味。好吃。
馅料用回之前买的香兰莲蓉。两者陪在一起,超赞。
Today i am making Bing Pi Mooncake. In this Bing Pi skin i use coconut milk to replace the water.
Love this flavor with the coconut milk skin and the pandan paste together, and they are just match.


这月饼的模,印出的花纹也很漂亮。绿白的颜色也漂亮。
整体上,很满意这月饼。
皮和馅料的比例是以个人的喜好。有人喜欢皮厚馅料少,有人却喜欢皮薄馅厚。
我的比较是一半一半。皮料我用了55 克一个,馅料是 60 克一个。
This mooncake mould made a beautiful shape. The green and white color are so beautiful.
All over, i am satisfied on this mooncake.
The ratio for skin and filling is according to youself. Some like skin thick and the filling little, and some like the filling to be thick. So it is depending on one person likes.
I use 55 g for the skin and 60 g for the filling.

Ingredients :

A     )250 gm HK Bing Pi Premix  香港冰皮预拌粉
38 gm Shortening 白油

B     ) 150 gm Coconut oil (Boiled) 浓椰浆(煮滚)

Filling 馅料 :

Pandan lotus paste 60 g each ball

Methods 做法 :

1.     Combine (A) and mix to form breadcrumbs. Add in (B) to form a soft dough. Rest for 15 minutes.
将冰皮粉和白油搓成饼干碎,加入(B)搓成软团。休息15 分钟。

2.     Divide the dough into 55 g each and wrap in the filling.
将软团分成 55 克一个,在包入馅料。

3.     Put in the mould and press in the mooncake mould.
压入月饼模成型。
