水果蛋糕 Fruits Cake


Today is my birthday, so i attempt to make myself a birthday cake.
This is a first cream cake i made.
Just simply decorate with some fruits that i like.




Recipe refer to Nasi Lemak Lover with some changes and adjustment.

Orange Sponge Cake 
Ingredients :

3 ..... Egg yolks
15 g ..... Sugar
80 g ..... Cake flour*
1/2 tsp ..... Baking powder*
1/2 tsp ..... Baking soda*
55 g ..... Orange juice
1 tsp ..... Orange zest
40 g ..... Corn oil
* mix and sifted

3 ..... Egg white
55 g ..... Sugar
1/4 tsp ..... Cream of tartar

Methods :

1.     Separate egg yolk and egg white into two different bowl.
2.     Add in sugar in egg yolk and beat until sugar dissolved and light.
3.     Add in corn oil and mix well, then add in orange juice, stir well to combined.
4.     Sift in the flour mixture and mix well.
5.     Beat egg white and cream of tartar until foamy, gradually add in sugar
  and continue to beat until approaching stiff peak.
6.     Take 1/3 of the meringue and mix with the egg mixture using spatula till slightly combine and fold in the balance meringue until well combine.
7.      Pour the batter into the cake pan, bake at pre-heat oven at 150 C for around 35 mins.
8.     Immediate invert the cake on the wire rack and let to cool before unmould.

For the cream :

300 g Fresh cream

Beat  the fresh cream until stiff peak and keep in the fridge before you decorate the cake.
For the leftover fresh cream can be store in fridge.

For the glazing :

( A)     1/2 cup Water,          1/4 cup ..... Sugar

( B )     1/4 cup ..... Water,          1 tbsp ..... Tapioca starch or corn starch ----- mix together

Method
1.     Add 1/2 cup water and 1/4 cup sugar in a small saucepan over medium heat, stir till sugar dissolved.
2.     Pour the tapioca mixture into the hot water and stirring constantly. Allow the mixture to simmer for 1 to 2 mins until  thickened. Remove the pan from heat.
3.     Set aside to cool in room temperature, brush clear glaze on the fruits.

For Cake decorating :

Some fruits ----- manggo, strawberry, dragon fruits, blueberry
Some roasted almond slices

1 sponge cake and slice into half.

Methods :

1.     Place 1 pieces of the sponge cake on a cake plate, spread the fresh cream evently on the cake slice and put on some fresh manggo on top.

2.     Cover another slice of cake on top. Frost the whole cake with fresh cream.

3.     Decorate with the fruits and roasted almond slices.

4.    Lastly, glaze the fruits.
