肉松蒸班兰蛋糕 Pork Floss Pandan Steamed Cake


今天的茶点,就是这美味的班兰鸡蛋糕,之间的夹心是鸡肉丝。

糕体很松,蛋糕屑会掉满地,不过很好吃哦。

我家儿子不会吃这蛋糕,把地上弄得满地蛋糕屑,气死我了。

Ingredients :

A : 250 g eggs (about 5 eggs) i use 7 smaller eggs,     170 g castor sugar

B : 190 g cake flour,     1/2 tsp + 1/4 tsp baking powder

C : 3 tbsp soy milk / milk ( 1 use evaporated milk )     3 tbsp vegetable oil     few drop of pandan essence

D : adequate of chicken floss / pork floss

Methods :

1.     Line a 20 cm X 20 cm cake pan with baking paper.

2.     Combine and mix ( C ) together.

3.     Beat ( A ) using low speed and change to high speed and beat until the mixture turn pale and thick. Change low speed and beat for 1 - 2 minutes.

4.     Sift in ( B ) and add in ( C ) to the egg mixture. Use a spatula to mix till well combined. Rest for 10 mins.

5.     Pour half of the batter into the cake pan, steam with high heat for 10 min with boiling water.

6.     When done, sprinkle ( D ) on top and pour the remaining batter, steam with high heat for another 10 mins.
