阿叁花枝 Fried Squid with Tamarind


Sotong Goreng Assam ----- Nyonya style cooking.
I saw this in the book "Truly Nyonya Malacca".
I like assam cooking with all kind of food.
Very appetizing and delicious.



Ingredients :

300 g --------------- Squid

Marinade :

3 tbsp ---------- assam / tamarind paste
1 1/2 tsp ----------- salt
1 tsp ----------pepper
1 tbsp ---------- dark soy sauce
2 tsp ---------- light soy sauce
1 tsp ---------- sugar

Methods :

1.     Clean, squid, remove its heat, ink bag and soft bones. 
Cut into pieces. Mix in marinade and set aside for 20 minutes.

2.     Heat up cooking oil and quickly fry the marinade sotong, 
cover the pot and cook for about 3 minutes. Open the lid.

3.     Taste and ready to serve.
