栗子焖鸡 Braised Chicken with Chestnut

 I haven cook this dish for a long time.
That day go shopping and see some dry chestnut so gab some home.
i ask my kids to help me to remove the skin of the chestnut.
He ask me why got so many work to do when i want to eat this.
I told him, if you want t eat good food, sure you want to work for them first.
After remove 2or 3, he said, mammy you finish it la,  want go to play liao.
Em..... no pattience one....
But when eat, he said, mammy so good....




  Recipe :
1/2 pcs of chicken, cut into small pieces
10 dried chestnuts, soaked overnight and removed the skin
5 pip garlics, peeled
10 shallots, peeled
8 slices ginge
1 carrot, peeled and cut into chunks

Seasoning:
1 tbsp oyster sauce
1/2 tbsp light soy sauce
1 tsp sugar
some salt
300 ml water 2 stalks spring onions, cut into short lengths (optional)

Methods :

1. Heat oil, saute garlic, shallots and ginger until aromatic. Add chestnuts, seasoning and bring to boil. Lower the heat and simmer for 20 mins.

2. Add carrot, chicken and simmer for another 20 mins or until meat is cooked.

3.   Lastly stir in spring onions. Dish up and serve.
