今天的虾料理本来是要煮Sonia (Nasi Lemak Lover)的葡汁虾,可是因为家里切少了某些材料,之后把它换成这茄汁虾。家人的最爱。
下次吧。等我买齐了材料才煮啦。。。
材料 :
300克 明虾
1/2 条青瓜(切角)
1/2 粒红灯笼椒(切角),我用青椒
2片 生姜(切 末)
1 棵青葱(切段)
1 棵芹菜(切段)
1/2 茶匙蒜蓉(切末)
1/2 茶匙葱蓉(切末)
茄汁料 :
4 汤匙番茄酱
1 茶匙糖
1/2 茶匙盐
1/2 茶匙白醋
1/2 杯清水
1 茶匙粟粉水(勾芡用)
做法 :
1. 明虾剪去须和脚,挑去肠泥,洗净濾乾,备用。
2. 青瓜和红灯笼椒泡油,隔乾油份备用。
3. 烧热锅下2汤匙油,炒香姜蓉和蒜蓉和葱蓉,再加入虾,青瓜,灯笼椒和茄汁料炒至熟后下粟粉水勾芡,洒上葱段即可。

Ingredients :
300 g prawn, 1/2 cucumber (wedged), 1 red capsicum (wedged), 2 slices ginger (minced),
1 spring onion (sectioned), 1/2 tsp chopped garlic, 1/2 tsp chopped shallot
Tomato Sauce :
4 tbsp tomato sauce, 1 tsp sugar, 1/2 tsp salt, 1/2 tsp vinegar, 1/2 cup water
Thickening :
1 tsp cornflour solution
Method :
1. Prawn remove palpus and leg, clean and pat dry. Clean cucumber and capsicum and cut into wedges. Chop spring onion and ready to use.
2. Deep fry prawn in hot oil, drain well. Parboil cucumber and capsicum in hot oil and remove, set aside.
3. Heat up 2 tbsp of oil, saute ginger and garlic and shallot, add in tomato sauce and bring to cook until sauce is thicken. Return prawns, cucumber and capsicum, stir-fry till cooked, sprinkle chop spring onion and serve.
