江鱼肉碎扒豆腐 Bean Curd with Anchovy and Minced Pork
我家的料理大多数都有多多的汁,因为小孩可以配饭一起吃。这料理真的很下饭,单吃汁和饭都可以吃一大碗的饭。
食谱来自 :K.S. Lee的《 道地家常菜》
材料 :
咸鱼粒 (炸香) 1大匙 (我家没咸鱼,所以换成了小江鱼)
肉碎 200克
盒装豆腐 2块
香菇(切粒) 2朵
指天椒 (切粒) 2条
蒜蓉 1/2大匙
调味料 :
蚝油 1大匙
糖 1/2大匙
鸡精粉 1 1/2 小匙
辣椒酱 1大匙
盐 1/4小匙
胡椒粉 1/4小匙
芡汁 :
薯粉 1大匙, 水 1/2 杯
做法 :
1. 豆腐蒸 8 分钟,倒掉水份,备用。
2. 烧热 3 大匙油,加入肉碎,指天椒和蒜蓉炒香。
3. 加入香菇和咸鱼粒。
4. 加入调味料炒片刻。
5. 加入芡汁, 以中火炒至浓稠。
6. 最后倒入已煮熟的豆腐上即可。

Ingredients :
1 tbsp chopped salted fish (deep-fried), (i change to anchovy)
200g minced pork, 2 boxes bean curd, 2 mushroom (diced), 2 cili padi (diced), 1/2 tbsp minced garlic
Seasoning :
1 tbsp oyster sauce, 1/2 tbsp sugar, 1 1/2 tsp chicken essence powder, 1 tbsp chilli sauce, 1/4 tsp salt, 1/4 tsp pepper powder
Starch Solution :
1 tbsp corn flour and 1/2 cup water
Method :
1. Steam bean curd for 8 minutes. Pour the water out and set aside.
2. Heat up 3 tbsp oil, fry minced pork, chilli padi and minced garlic until fragrant.
3. Add in mushroom and salted fish.
4. Add seasonings and fry for a while.
5. Add starch solution, fry over medium heat till the gravy is thickened.
6. Lastly pour the sauce onto steamed bean curd.
